Santa Fe Chicken
Recommended by Diane Peterson and Rachel Hubbard
4-5 Chicken Breasts
2 Cups Salsa
2 Cans Black Beans, Drained and Rinsed
2 Cans of Corn, Drained
1- 4oz. can of Green Chilies
1 Packet or 3 Tbs. Taco Seasoning
1 tsp. Cumin
Get out that crock pot, because here is an super easy recipe!!! Through in all your ingredients. Make sure you drain and rinse your black beans, and drain your corn. There will be plenty of water in this already, leaving in the corn water will only make it soupy. Cover and cook on low for 6 hours.
About 1 hour before you are ready to serve, pull out your chicken and shred it, and put it back in.
Serve with Cheese, Sour Cream, Lettuce, Tortilla Chips/Tortillas etc.

My Opinion:
(Read with Caution)
I have to preface all my opinions with that, just so all knows, that this is solely my opinion, and nothing else. This has been a favorite of mine for along time. I have had two other recipes besides this one, that are super similar! One had instant rice, and another no taco powder or chilies. I loved them both, but this definitely tops it off for me. I really liked the taco seasoning. This takes maybe 10 min. to put everything together, and the crock pot does the rest. You can freeze any leftovers, and serve it again another day!
