Flan

Flan


1 cup sugar
1 can of sweetened condensed milk
2 "cans" of milk
3 eggs

In a saucepan, melt sugar. Don't stir, just shake the pan until its melted and a dark golden brown. Pour the melted sugar into a 8 or 9 inch pie plate. Try and spread it to evenly coat the bottom and sides.

In a separate bowl, mix sweetened condensed milk, milk and eggs. (As a side note, you can add 3 egg yolks additionally to make the flan more creamy) Pour the mixture into the pie plate.

Carefully put the pie plate inside another dish - like a 9x13 pan. Fill the 9x13 pan with near boiling water - just until the water level is even with your milk/egg mixture. This is creating a water bath.

Bake at 350 degrees for 1 hour to 1 1/2 hour. Stick a knife in to see if it comes out clean. If it does, the flan is done. This dessert MUST be chilled for about 6 hours. You will want to dig in but don't! After it is well chilled, use a knife around the edges to free it. Place a plate on top of the pie plate and invert the dessert onto the plate. The sugar "glaze" should fall over the top of the dessert. This takes a while (mostly baking and chilling time) but it is fun and worth it!
